Peanut-chickpea paste or dressing

Peanut-chickpea paste or dressing

. 1/4 cup (60 ml) smooth peanut butter
. 1/4 cup (60 ml) fresh lemon juice (1 large lemon)

Add and mix well
. 1 small garlic clove, minced
. 2 tablespoons (30 ml) olive oil
. 1/2 teaspoon ground cumin

Add and process until smooth
. 1 (15-ounce) can chickpeas
. Salt to taste
. 2 to 3 tablespoons (30 to 45 ml) water

Serve as a spread on buttered bread, as a dip, or as a dressing for hot vegies or salads.
A dash of paprika and a drizzle of olive oil can be included in serving.
